Winemaking and ageing:
Preparation (including used yeasts): Manual harvest, with a process of se

mi-freezing of grapes, passing through selection tables and cold maceration at
4oC for 24 hours. Alcoholic fermentation with selected yeasts ata a temperature
of 28oC for 7 days. Maceration post-fermentation for 14 days. The vats period
is 22 days in total. The wine realted to this selection is only to Vine de Gota.
Ageing in oak barrels for 14 months, French and American oak. Bottle aged for
22months.

Deep cherry red colour.
Nose:
Aromas of ripe and black fruits, blackcurrants, cherries and plums, with balan

ced and wel-integrated oak nuances which give way to vanilla and coca notes.
Palate:
Full and round on the palate, with clear different flavour layer and sweer tnanins.
Along finish with excellent fruit and toast notes.
Food pairing:
Stews and vegetables, Migas de pastor (a typical Spanish breadcrumbs recipe),
big game, red meats, grilled meats, cured cheeses.
